Senior Operations & Business Development Manager – Hospitality Group
We are seeking a highly experienced, commercially focused and hands-on Senior Operations & Business Development Manager to oversee and improve the performance of our hospitality businesses, with direct responsibility for our management teams and crew in the UK. The successful candidate will work closely with ownership and will take responsibility for people management, operational performance, labour control, food costings, rotas, training, profitability and business growth. We are looking for someone with significant hospitality/F&B experience who understands both the people and financial sides of running successful restaurant operations. Key Responsibilities * Take overall responsibility for the performance and development of our UK restaurant managers, supervisors and crew. * Oversee staffing structures across locations and ensure each site has the appropriate level of management and crew. * Design, review and approve weekly staff rotas based on sales forecasts, operational requirements and labour-cost targets. * Monitor staff hours, overtime and labour percentages and take action where costs are above target. * Recruit, train, coach and develop managers and team members where required. * Conduct regular performance reviews and ensure managers and crew are meeting expected standards. * Address underperformance and work with managers to implement clear improvement plans. * Ensure teams maintain high standards of customer service, productivity, cleanliness, food quality and operational compliance. * Develop and implement structured staff training and development programmes. * Build a strong culture of accountability, performance and teamwork across the UK operations. * Analyse weekly and monthly sales, labour costs, food costs, gross profit and profitability. * Monitor and control food costings, recipe costs, portion control, wastage and purchasing. * Review supplier pricing and identify opportunities to reduce costs and improve margins. * Oversee stock ordering and inventory management, ensuring appropriate stock levels while minimising wastage and over-ordering. * Establish and monitor operational KPIs including labour %, food cost %, gross margin, productivity, wastage and sales performance. * Identify areas of overspending or operational inefficiency and implement corrective actions. * Review individual store performance and hold managers accountable for agreed financial and operational targets. * Develop and implement systems and procedures to improve efficiency and consistency across the group. * Identify new revenue opportunities through corporate accounts, catering, partnerships, events and local business development. * Develop strategies to increase sales, customer reach and brand visibility. * Support new openings, including staffing structures, recruitment, training, rotas, cost controls and operational setup. * Provide ownership with regular performance reports highlighting results, issues, cost-saving opportunities and recommended actions. Candidate Requirements * Extensive experience within hospitality, restaurants or F&B operations is essential. * Strong experience managing large teams, managers and frontline crew. * Multi-site operational experience is highly desirable. * Proven ability to control labour costs, food costs and operational expenditure. * Strong understanding of P&L, margins and restaurant profitability. * Excellent knowledge of rota planning, labour forecasting and staffing optimisation. * Strong experience in food costing, stock management, purchasing, portion control and wastage reduction. * Proven ability to recruit, train, motivate and manage high-performing teams. * Ability to analyse operational and financial data and turn it into practical actions. * Strong commercial and business-development mindset. * Excellent leadership, communication, negotiation and problem-solving skills. * Highly organised, proactive and capable of working independently. * Comfortable working directly with ownership and being accountable for results. * UAE driving licence is an advantage. The Person We Are Looking For We are looking for a highly experienced hospitality operator who understands people, operations and numbers. The right person should be able to review a restaurant and quickly identify whether the rota is inefficient, labour costs are too high, food costs need attention, staffing levels are incorrect, stock is being over-ordered, wastage is excessive or team performance needs improvement. They must also be a strong people manager who can lead the UK management teams and crew, set expectations, improve performance and hold individuals accountable. This is a hands-on senior role with significant responsibility. The successful candidate will play a key part in building a well-managed, cost-controlled, high-performing and scalable hospitality operation. Pay: AED5,000.00 - AED8,000.00 per month Work Location: In person
