Our food and beverage operations cover fine dining outlets, high-volume all-day dining, lounge bars, banquets, and in-room service. We are seeking an ambitious Restaurant Operations Management Trainee to undergo a dual-focused rotational program covering both Front-of-House (Service) and Back-of-House (Kitchen Operations). Position Summary This Management Trainee program offers comprehensive exposure across both restaurant service and kitchen operations. Under the direct mentorship of the Food & Beverage Director and Executive Chef, you will learn to manage guest dining experiences, oversee floor service, control costs, and support kitchen execution. This structured pathway prepares high-performing candidates for junior management roles (such as Assistant Restaurant Manager or F&B Supervisor) upon program completion. Key Responsibilities & Rotations 1. Front-of-House Service Operations Guest Service & Floor Supervision: Oversee floor operations during meal shifts, manage floor seating plans, greet VIP guests, and resolve guest complaints with tact and professionalism. POS & Table Management: Master POS system operations, order taking, table turnover management, bill settlement, and cash handling procedures. Beverage & Bar Operations: Gain hands-on exposure to bar service, coffee preparation, wine service protocols, and beverage inventory management. Service Standards & Briefings: Conduct daily pre-shift briefings with service staff, enforce grooming and service standards, and train waitstaff on menu upselling techniques. 2. Back-of-House & Culinary Integration Kitchen Rotations: Work alongside culinary teams across key kitchen stations to understand ticket flow, prep timing, dish presentation, and food allergies. Expediting & Kitchen-Service Bridge: Act as the liaison between floor servers and line cooks during peak service to ensure order accuracy and prompt delivery. Hygiene & HACCP Audits: Conduct joint sanitation audits covering both food prep areas and dining room service stations to maintain health and safety compliance. 3. Management & Administrative Responsibilities Costing & Inventory Control: Assist with F&B cost analysis, monthly inventory counts (food, beverage, linen, glassware), requisition processing, and waste tracking. Labor & Scheduling: Learn labor scheduling principles, shift allocation, and productivity tracking across front-of-house and back-of-house teams. Event & Banquet Execution: Assist in planning, setting up, and coordinating private dining functions, corporate events, and hotel banquets. Qualifications & Requirements Education: Bachelor’s Degree or Diploma in Hospitality Management, Culinary Management, or F&B Administration (graduated within the last 1–2 years). Experience: Prior internship or floor experience in a hotel restaurant, fine-dining venue, or high-volume dining outlet. Leadership Potential: Demonstrated leadership skills, strong interpersonal communication, and a passion for customer service excellence. Technical Skills: Basic understanding of F&B financial metrics (food/beverage cost percentages, labor costs), proficiency in Microsoft Office (Excel/Word), and familiarity with POS/reservation software. Personal Attributes: High emotional intelligence, adaptability under pressure, excellent problem-solving ability, and willingness to work flexible shifts, weekends, and holidays.
