Ribs & Brews at Hilton Dubai Al Habtoor City is looking for a dynamic and commercially driven Restaurant & Bar Manager to lead one of Dubai’s most energetic sports and entertainment venues. Ribs & Brews combines bold American-inspired food and drinks with live sports, live entertainment and interactive experiences including pool, darts, PlayStation, golf and racing simulators. The successful candidate will be responsible for bringing all of this together through exceptional service, strong team leadership and a commercially focused approach. THE ROLE As Restaurant & Bar Manager, you will take full ownership of the day-to-day operation of Ribs & Brews, ensuring a lively, welcoming and consistently high-energy environment while delivering outstanding guest experiences and strong business results. You will lead the team from the floor, set the pace of service and create an atmosphere that keeps guests coming back — whether they are joining us for a major sporting event, a casual evening with friends, live entertainment or a night of food and drinks. KEY RESPONSIBILITIES Lead and manage the daily operations of Ribs & Brews, ensuring smooth and efficient service across the outlet. Create a vibrant sports-bar atmosphere that reflects the personality and identity of the venue. Drive revenue, profitability and average spend through effective sales strategies, promotions, events and upselling. Maximize business opportunities around major sporting events, live entertainment, themed nights and promotional activities. Monitor outlet performance, including revenue, beverage sales, food sales, guest spend and operational costs. Lead, coach and develop the restaurant and bar team, creating a culture of accountability, engagement and high performance. Maintain consistently high standards of guest service, food and beverage quality, presentation and cleanliness. Be highly visible on the floor and actively engage with guests to understand their experience and build loyalty. Manage guest feedback and complaints professionally, turning challenges into opportunities to strengthen the guest relationship. Work closely with Culinary, Events, Sales & Marketing and other hotel departments to maximize outlet performance. Ensure responsible service of alcohol and full compliance with hotel policies, licensing requirements, health and safety standards. Monitor stock, beverage controls, wastage and other cost areas to protect profitability. Plan staffing levels and schedules according to business demands, events and peak periods. Ensure all promotions, offers and entertainment activities are executed effectively and commercially. Maintain a strong understanding of current sports, entertainment and hospitality trends to keep the outlet relevant and competitive. Ensure the outlet consistently delivers Hilton service standards and brand expectations. WHAT WE ARE LOOKING FOR Proven experience as a Restaurant Manager, Bar Manager, Sports Bar Manager or Outlet Manager within a high-volume hotel, bar, gastropub, sports bar or entertainment venue. Strong background in food and beverage operations, particularly in a high-energy, late-night environment. Commercially minded with a proven ability to drive revenue and maximize guest spend. Strong knowledge of beverage operations, bar controls and responsible alcohol service. Confident and engaging personality with excellent guest interaction skills. Strong leadership, coaching and team-development capabilities. Ability to remain calm, decisive and hands-on during busy services and major sporting events. Creative approach to promotions, entertainment and guest engagement. Excellent communication and interpersonal skills. Strong understanding of F&B cost control, inventory management and operational standards. Previous UAE or international hospitality experience is preferred.
