The successful candidate must be flexible regarding start and finish times to support the daily production schedule. Job Purpose The Pastry Lead is responsible for supporting the Pastry Manager and Bakery Manager in the smooth and efficient running of the Bakery and Pastry Room. The role involves leading and supporting the pastry team on a day-to-day basis, coordinating production, maintaining high standards of product quality and presentation, and ensuring that products are prepared and completed on time. The successful candidate will be an experienced pastry professional who leads by example, has excellent attention to detail and is able to motivate and support the team in a busy production environment. Key Responsibilities Pastry Production - Assist the Pastry Manager and Bakery Manager with the planning and organisation of daily pastry production. - Lead the pastry team during daily production and ensure tasks are completed efficiently and to the required standard. - Prepare and produce a range of high-quality sweet and savoury pastry products. - Assist with the production of croissants, Danish pastries, puff pastry products, tarts, cakes and other baked goods. - Prepare and handle pastry, fillings, creams, custards and other ingredients. - Oversee the baking, finishing, glazing and decorating of pastry products. - Ensure all products are produced consistently in accordance with approved recipes and specifications. - Maintain high standards of product quality, consistency, portion control and presentation. - Ensure production quantities are achieved within the required timescales. - Check finished products before they leave the pastry room to ensure they meet company standards. Team Leadership - Lead by example and demonstrate excellent standards of work, attitude and professionalism. - Allocate daily tasks to pastry team members in conjunction with the Pastry Manager. - Support, train and guide Pastry Assistants and other members of the bakery team. - Ensure team members understand recipes, production methods and quality standards. - Monitor team performance and provide constructive feedback where appropriate. - Encourage good communication, teamwork and a positive working environment. - Assist with the induction and training of new team members. - Report any performance, attendance or conduct concerns to the Pastry Manager or Bakery Manager. Food Safety & Hygiene - Maintain excellent standards of cleanliness and hygiene throughout the Bakery and Pastry Room. - Ensure all team members follow food safety, allergen and health & safety procedures. - Ensure ingredients and finished products are correctly labelled, dated and stored. - Monitor allergen controls and prevent cross-contamination. - Ensure cleaning schedules are followed and completed correctly. - Report any food safety, hygiene or equipment concerns immediately to the Pastry Manager or Bakery Manager. Stock & Waste Control - Assist with monitoring pastry ingredients and stock levels. - Ensure ingredients are stored correctly and used within their required shelf life. - Assist with stock rotation and ordering requirements. - Minimise waste while maintaining product quality. - Monitor portion sizes and production quantities to help control food costs. - Report shortages, wastage or quality issues to the Pastry Manager. Communication & Administration - Communicate effectively with the Pastry Manager, Bakery Manager and wider bakery team. - Ensure daily production requirements are clearly communicated to the pastry team. - Highlight any issues that may affect production, quality or service. - Assist with maintaining production records and relevant bakery documentation. - Support the Pastry Manager with implementing new products, recipes and production procedures. - Carry out any other reasonable duties required to support the smooth running of the bakery. Skills & Experience Essential - Previous experience working in a professional bakery or pastry environment. - Strong knowledge of pastry production and baking techniques. - Experience working to recipes and production specifications. - Experience of leading or supervising a small team. - Excellent attention to detail and high standards of presentation. - Good understanding of food hygiene and allergen management. - Ability to organise and prioritise workload effectively. - Ability to work calmly and efficiently under pressure. - Excellent communication and teamwork skills. - Reliable, punctual and hardworking. Desirable - Formal pastry or bakery qualification. - Food Hygiene qualification. - Experience in a high-volume production bakery. - Experience training and developing junior bakery or pastry staff. - Experience with product development and recipe testing. - Good understanding of production planning and stock control. Working Environment This is a busy bakery production environment where teamwork, organisation, cleanliness and efficiency are essential. The role is hands-on and involves being on your feet for extended periods, handling food and ingredients and working with bakery and pastry equipment. The Pastry Lead is expected to lead by example and ensure that high standards of food safety, personal hygiene, cleanliness, health & safety and product quality are maintained at all times. Pay: £13.87 per hour Expected hours: 37.5 per week Work Location: In person
