Head of Operations – Scrannery Ltd Scrannery is a growing hospitality business operating across Sheffield and Chesterfield. We are looking for a Head of Operations to take ownership of our estate, improve site performance, develop our managers, and help turn a young hospitality brand into something people recognise and love. This is a senior, hands-on operational role. You will be based at Discovery in Sheffield, with regular travel across all Scrannery sites. You will work closely with the business owners but will be expected to take real ownership of day-to-day operations, commercial performance, people management, standards, compliance, and customer experience. The role will suit someone with energy, drive and strong hospitality judgement. You need to be comfortable on the floor, confident with numbers, and able to lead managers without simply doing their jobs for them. Key responsibilities include: Taking full accountability for the commercial performance of each Scrannery site. Building a clear site-by-site understanding of sales, gross margin, labour, waste and cost control. Producing a costed route to growth for each site and owning delivery. Managing labour spend against real trading patterns across permanent and casual teams. Leading, coaching and appraising Catering Managers and site leaders. Ensuring every site has clear leadership, proper standards and the authority to operate effectively. Owning food safety, allergen, health and safety, licensing and payroll compliance across the estate. Overseeing rotas, cover, service periods, events and pre-booked functions. Managing landlord, partner and supplier relationships professionally. Developing our Sheffield event space and content room as a proper revenue line through workshops, meetings, evening events, content bookings and private hire. Maintaining consistent Scrannery standards across menu, presentation, signage, uniform, service and tone of voice. Providing weekly trading reports and monthly business reviews to the business owners. Leading change projects such as menu launches, systems improvements, refurbishments and new sites. About you You will need proven experience managing a catering, café or hospitality operation with full commercial accountability. You should be able to show how you have improved a site’s performance, not just that you have managed one. You will be commercially literate, confident with P&L, labour modelling, gross margin and cost control. You will also need strong people management experience, including recruitment, development, performance management and formal conduct processes. You must be confident with food safety, allergens, licensing and health and safety requirements, and comfortable using ePOS, rota systems, stock control and other operational systems. This is not a role that can be run from an office. You will need to be hands-on, decisive, resilient, and willing to move between floor leadership, people management, commercial analysis and external relationship work throughout the week. A full UK driving licence and access to your own vehicle are essential. Essential requirements Proven hospitality, café or catering management experience. Commercial accountability for sales, margin, labour and cost control. Strong people management experience. Good understanding of food safety, allergens, licensing and health and safety. Confidence using ePOS, rota, scheduling and stock systems. Excellent written and verbal communication. Full UK driving licence and access to own vehicle. Level 3 Food Hygiene Certificate, or willingness to achieve this during probation. Level 3 Health and Safety qualification, or equivalent experience and willingness to achieve this. Desirable experience Multi-site management experience. Experience selling and delivering events, functions or space hire. Experience of concession or host-building operations. Personal Licence Holder. Knowledge of the Sheffield and Chesterfield hospitality markets. Hours are flexible and will include early mornings, evenings, weekends and event cover as operationally required.
