Manage and oversee the dispatching area, call for the ordered food, and quality check the food to be served to the guests ensuring that the temperature, presentation and plating of the food meet the standards of the restaurant. Oversee the Demi Chef and Commis, and ensure they are following the kitchen protocols and food handling and preparation standards of the company. Quality check all food before serving to the guests to ensure the plating, presentation and quality of food meet the standards of the restaurant. In-charge of ensuring all incoming raw products and ingredients are fresh, and of good quality. ·Responsible for the proper monitoring and the stocks inventory, and implementation of “First in, first out” policy. In-charge of checking and maintaining the temperature of the fridge to avoid spoilage of items. ·Ensure the strict implementation of proper food handling and preparation, workstation cleanliness, hygiene and safety protocol to avoid any work accident and food safety incidents. Assist the Head Chef/Executive Sous Chef in creating menu items, recipes and new dishes. Constantly communicate or report any concern in the kitchen to the designated Manager and Head of the Department to ensure that all concerns are addressed properly and in a timely manner including issues with the kitchen equipment and machineries that needs the attention of the Maintenance department. In-charge of plotting the schedule of kitchen staff to ensure there is enough manpower to support the restaurant operations. Perform related duties as assigned by the management.
