If you are just as passionate as we are, come join our Brew Crew! Brew Crew Opportunity Our Global Brew Crew is seeking Assistant Production Manager, who will be reporting to the Head of Production. This role is responsible for the efficient and effective management of the Food Production of CBTL Malaysia in ensuring that quality food products are produced at economical costs resulting in profitable production operations for all Cafes in Malaysia. Key Responsibilities In this role, you will: Assist the Head of Production in day-to-day operations. Work with Head of Production on research & development for new food items considering market conditions and popularity. Be responsible of overall food production planning and management of the Pastry, Bakery & Gourmet Production. Oversee all Production preparation and ensure that food products are of quality and conform to high standards and reputation. Inspect and ensure that correct sizes and portions of food are produced. Attend all correspondence/enquiries directed to them which requires their personal attention. Review the duty roster of their department and ensure that there is adequate staff coverage before approving such duty roster. Requisite for food supplies and kitchen utensils/equipment through the Purchasing Department. Inspect the Production facilities and takes note if any irregularities to staff or kitchen operations on regular basis. Recruit, select seniors, and supervise staff appointments. Train, guide, and develop immediate subordinates in achieving higher levels of excellence. Motivate and counsel immediate subordinates and attends to grievances. Establish manpower requirements for the kitchen. Evaluate the performance of his immediate subordinates and completes such performance appraisal reports. Reviews/approves the performance appraisal reports of other ground staff in accordance with the personnel policies & guidelines. Enforce the compliance of Production procedures. Liaise closely with other departments on Production related matters. All persons shall have the responsibility to report problem(s) with regards to the Food Safety Standards to identified person(s). Carry out ad hoc job-related assignments and / or tasks as delegated by immediate superiors. Additional skills but not essential as Assistant Production Manager: Food Production Management Establishes food preparation standards and measurement of results. Inspects preparation method and makes adjustment for improvement. Sets standards for quality and quantity. Arranges food tasting to ensure consistency in quality and portion size. Views and verifies colour, texture, garnishments, and portion size. Conducts research and recommends new recipes and display. Monitors and controls wastage. Inventory Management Establishes and exercises FIFO concept. Estimates food and product consumption and maintains sufficient stock to ensure quality, freshness, and continuity of supply without disruption. Analyzes popularity of products and recommend changes to increase volume of sales. Working Environment Implements and enforces government hygiene and sanitation requirements. Maintain first aid certification. Implement and enforce on proper usage of kitchen utensils, equipment, and machinery. Schedules periodic thorough cleaning and arranging for preventive maintenance, and repair of equipment and machinery. Your Ingredients Qualification & Experience Degree or Diploma in Culinary Arts/ Hotel & Catering 6 years’ combined experience in Central Kitchen for SPM holder Minimum 2 years as Pastry Chef in a Large Central Kitchen. For those candidates with Cert/Diploma in Hotel Catering, required at least has 5 years relevant working experience in a Large Central Kitchen and minimum 2 years’ experience as Gourmet Chef, Pastry Chef or Chief Baker.
